Although we have been producing fermented dairy products like cheese and yogurt for thousands of years, there continues to be mixed opinions whether these dairy products are good or bad for you.

Currently there is support to suggest that the fermented dairy choices produce healthier products than traditional milk, which is loaded with sugar. These sugars, predominantly galactose produce inflammation. This inflammation damages cells and causes obesity. As the fermentation process destroys galactose, these cheeses and yogurts can lower your blood sugar as well as your insulin levels, which when elevated can lead to diabetes and or risks for heart attacks. These cheeses may also decrease your levels of the LDL(bad) cholesterol when compared to butter.
